Cleaning Fruits and Vegetables

In the Oct. 4 New York Times there is an article about the best ways to clean produce. The bottom line finding of The Claim: A Soap-and-Water Rinse Gets Produce Cleanest is to remove pesticides and germs, and yes organic comes with a risk, albeit lower, is rinse produce with a vinegar solution, then wash with tap water for at least 30 seconds. Studies show that tap water alone was sufficient in reducing 9 of 12 pesticides and it worked as well as soap and wash products. Friction was the key ingredient. The mechanical action of rubbing the produce under tap water is likely responsible for removing pesticide residues.”
